1st recipe: Sweet breads of cinnamon with grapes raisins

In Greece it is customary to make bread on holidays. There, the bun (and brioche) is called 
Τσουρέκι, the salty bread is called Ψωμί but the bread in round hole in the center and is called Kουλούρα.

RECIPE -  Τσουρεκάκια κανέλας με σταφίδες (  Sweet buns with raisins cinnamon )

Ingredients:

4 cups with  flour
¾ cup of warm milk
¼ cup of warm water
1 / 6 cup of oil
1 egg
½ cup of sugar
30 grams of yeast

Ingredients for the filling:

1 / 3 cup softened butter tea
½ cup of sugar (half and half with brown sugar, if any)
A handful of raisins (soak in water for 15 minutes and drain)
Ground cinnamon

Preparation:
Hit it in the blender, except the flour.
Mix and knead everything (can use bread maker mode mass).
'Let rest covered for about 50 minutes, or until doubled in volume.
'Roll out the dough to roll on floured surface, rectangular in shape. The thickness is up to you.
'Spread the filling over the surface of the dough.
'Wrap the dough and cut into rolls. The thickness of the rolls depends on the height of the form used. Cut the same height as or slightly smaller.
'Place in baking dish side by side without pressure.
'Bake in preheated oven at 250 oC for 25 min. Do not cook further or it will be too dry.

Tips:

- This recipe can be increased using different fillings such as honey, nuts, almonds, etc..
- Always use refined sugar or refined brown sugar mixture to the filling is moist.
- To make a recipe nistíssima (suitable for fasting Orthodox) do not use egg and add 1 / 3 cup milk.
- Like all the dough, you may need to add flour or milk, depending on the quality of ingredients and temperature.
